SYNOPSIS

When a Texas pitmaster declares that authentic Texas barbecue cannot be made anywhere but the Lone Star State, a journey begins across its four distinct barbecue regions. The film meets renowned pitmasters preserving the traditions and regional styles that have defined Texas barbecue for generations. Meanwhile, a California pitmaster attempts to recreate that tradition far from its roots, raising the question: Is authentic Texas barbecue defined by how it is cooked, or by the place, people, and culture behind the fire?
